Avocado, Tomato and Egg on Whole Grain Toast

If you are looking for a quick nutritious breakfast to prepare with minimal prep time then this one is for you. It is also one of my household favorites.

  • 1 Avocado sliced
  • 1 Tomato sliced
  • 1 whole egg boiled or fried
  • 2 slices Multi-Grain Toast
  • dash black pepper
  • dash sea salt
  • 1 tbsp olive oil


  1. 1. Mash the avocado in a small bowl and season with salt and pepper.

    2. Heat a small nonstick skillet over low heat, cover with oil and gently crack the egg into the skillet. Cook to your liking.

    3. Place your sliced tomato into the skillet and allow to lightly brown 

    4. Place mashed avocado over toast, top with egg and tomato. 

    Add salt and pepper to taste.

This is one of my favorite quick breakfast options. Not only is it loaded with healthy fats, fiber and protein but its simple to make and tastes delicious!
