 Happy Foody Friday, Pioneers!

Bell peppers are my absolute favorite vegetables, so today I’m bringing you a recipe for stuffed bell peppers. I recently started a clean eating challenge with hopes of losing weight and starting a new lifestyle. I’ve eliminated pork and beef, so for this recipe, I used ground turkey. Stuffed bell peppers are super easy to make and will definitely leave you satisfied.


3 bell peppers (For this recipe, I used yellow and red)

1 pound of ground turkey

1/2 can of chopped tomatoes

1 can of 14.5 ounce black beans

1 small diced red onion

1 tablespoon of minced garlic

1 cup of skim mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 tsp sea salt

1/2 tsp black ground pepper


Preheat oven to 350 degrees.

Wet a paper towel and wipe the peppers off. Cut the tops of the peppers off and cut the pepper horizontally (some people cut the tops off and stuff the peppers that way, but I don’t like my stuffed peppers to be too thick, so I cut them horizontally). Set peppers aside.

Bring a large pot of water to a boil. Add peppers and cook for 10 minutes. This will ensure that the peppers are soft.

While peppers are boiling, add the ground turkey to a separate pan. Add garlic powder, onion powder, salt, pepper, minced garlic, tomatoes and drained black beans. Cook until the meat is brown. Drain meat and set aside.

Remove peppers from pot. Line a baking pan with aluminum foil and spray with non-stick olive oil spray. Add peppers to baking pan. Scoop about 4 tablespoons of meat mixture into each pepper. Sprinkle about 1 tablespoon of mozzarella cheese onto each pepper. Bake for 10 minutes or until cheese is fully melted.

Let cool for 5 minutes and enjoy!
